Imhol mégegy bejegyzés a főzésről! :)
One of our dear co-workers here has a huge garden and grows all sorts of fruits and vegetables. So on Saturday he brought along a basket full of zucchinis to a social gathering (thanks, Jóska! :). Matthew received two, and this is what one of them looked like (I gave the other one away):
Matt is kapott kettőt.
So what does one do with such a huge vegetable? Well, cutting it up, breading and frying it would have taken hours, so I opted for a different solution, thanks to the idea of the great gardener's wife, Sandi. I cut it in two, carved the seeds out, stuffed it with curry turkey and rice, poured some olive oil on it and off it went into the oven! When it was done I sprinkled a generous amount of cheese on it, which - in my opinion - makes any kind of meal better! :)
This is what it looked like. I was going to bake it nicely in one piece, but it simply didn't fit into my dish! Well, all who tasted it liked it anyway. :)

Looks wonderful, Melinda! One of my favorite dishes is stuffed zucchini. I usually use hamburger & tomatoes with an Italian flavor. And, yes, don't forget the cheese to top it off!!!
Looks yummy. Wayne has a strong belief about zucchini. If you do not attend to them in a timely manner, they could attack you!
There are so many recipes on the internet, you could make something different every day. I have made a casserole that had sausage and stuffing in it. A bread with 2 cups of chopped zucchini and 2 Cups of blueberries. I agree with the cheese component.
I guess I may be the only one that had never made stuffed zucchini before! :) The stuff I put in was kind of given, i.e. leftovers! :)) I'll try it with a different stuffing next time! M.
